The omens:
they say, the first cries of crows herald the arrival of sugaring but when you hear those geese, or when the snow resembles coarse salt, the casting is nearing completion. It seems that even when the flow a lot Plains, spring will be big and when the snow falls thick and moist in appearance, it is a sign of a volley of sugars.
The appearance of the bird sugar means it's time to cut, while butterflies sugars drowned in the boilers of maples herald the end of casting. Moreover, when the Big Dipper, the pan of sugar, becomes flat the horizon, the sugaring season has arrived. Depending on Beauce, when we cut the maples at the crescent moon, the casting is great but if the maple runs out too quickly at the notch, the cast will not last long.
